Baked Cheesy Avocados: A Recipe

Thursday, August 16, 2012 at 12:58PM Confession time: Avocados are a staple in our home because of our dietary transition, and their many incredible health benefits - but up until very recently, I could NOT eat them unless they were in the form of guacamole.
I hoarded mounds of avocado recipes and kept them from my avocado loving husband, because I was so scared to try them again, and I knew he'd want me to. Until that fateful day when Christian asked me why we didn't eat more avocados, and I finally had to reveal the secret stash. I could put it off no longer, it was time to woman up and give avocados another try.
We tried a few recipes, but I didn't like any of them. Christian and the boys have practically turned green, just radiating avocado-ness, and Christian's constant lament "They're SO good, how could you hate them?" rang through my ears all day. I knew I had to find something I'd like.
Cheese.
I'd discovered a recipe that called for parmesan cheese and chipotle or hot sauce, neither of which can the boys tolerate, so I switched it up a bit and tried some alternative ingredients.
Are you ready? Because I created a recipe, kind of!

What You'll Need:
- Avocados
- Olive Oil
- Salt
- Pepper
- Shredded Mozzarella Cheese
- Shredded or Grated Parmesan Cheese
- To Bear With Me Because I Didn't Measure Anything
Preheat oven to 450 degrees.
Remove the pit, and score/poke the avocado halves.
Pour some olive oil into a ramekin or small bowl, add salt and pepper to taste, stir well.
{I also added about half a teaspoon of some minced garlic, when I tried this a second time.}
Drizzle the olive oil 'sauce' onto the halves, make sure to get into those nooks! Make them flavorful!
Add as much shredded mozzarella cheese as your avocado can handle, sprinkle some shredded/grated parmesan on the top.
Place halves {cheese side up!} on a baking sheet and pop into the oven. Bake for 10-15 minutes, or until cheese is a bubbly, beautiful, golden brown.
Devour!
The combination of the cheese, seasoning and baking made this perfect for me. No spicy sauces made it perfect for the boys {who ate an avocado half each, even Severus enjoyed some} and this recipe I sort of imagined, now lives in our favorites! {I'm so proud.}

These looks delicious!
I looooove guacamole, but avocados scare me. I tried one once and.. I don't know if it was ripe, too ripe, not ripe yet or whatever. I just know that the texture turned me off. Maybe I should also give them another go.
Aaand, I also customize recipes I see to make something I think my family will like. I can never replicate the good ones though lol

These sound delicious! Now mind you being a southern boy I would have to add a few jalapenos and a little bit of spice but that's okay I can adapt. Adaptation is what fatherhood and cooking is all about!
